Method

  1. Heat the oven to 375°F (190°C). Brown the beef with the onion and garlic over medium-high heat until no pink remains, about 8 minutes. Drain the fat. Stir in the mustard and seasoning.
  2. Spread the beef in a 9 by 13-inch baking dish. Top with bacon and half the cheddar.
  3. Whisk the eggs and cream and pour over the top. Scatter with the remaining cheddar.
  4. Bake 25 to 30 minutes until set and golden and a thermometer in the center reads 160°F (71°C). Rest 5 minutes and finish with pickles and scallions.

Chef’s notes

  • Serve with a salad or creamy coleslaw.
  • Sugar-free burger sauce (mayo, mustard, a little pickle brine) is excellent drizzled on top.

Storage: Refrigerate 4 days or freeze slices for 2 months.

Food safety: the USDA’s minimum internal temperatures are 165°F (74°C) for poultry, 160°F (71°C) for ground meat, and 145°F (63°C) for whole cuts of beef, pork, lamb and fish, with a 3-minute rest for the meat. Use an instant-read thermometer. More on food safety.
