Shrimp Scampi over Zucchini Noodles
Garlicky butter-lemon shrimp scampi over fresh zucchini noodles. A 20-minute keto dinner that tastes like Friday night at an Italian restaurant.
- Prep10 min
- Cook10 min
- Serves2

All the garlic, butter and white wine of a classic shrimp scampi, without the pasta. Zucchini noodles go in at the last minute so they stay crisp-tender instead of watery, and a little parmesan on top makes it feel like a proper entrée.

Method
- Pat the shrimp dry and season with salt and pepper. Heat the oil and 1 tablespoon butter in a large skillet over medium-high. Cook the shrimp 1 to 2 minutes per side until just pink; move to a plate.
- Lower the heat to medium. Add 2 more tablespoons butter and the garlic and pepper flakes and cook 30 seconds. Add the wine and lemon juice and simmer 2 minutes.
- Whisk in the last tablespoon of butter. Add the zucchini noodles and toss in the sauce for 1 to 2 minutes, until just tender.
- Return the shrimp to the pan, toss, and finish with parsley, parmesan and lemon zest.
Chef’s notes
- Salt the zucchini noodles and let them drain on paper towels for 10 minutes first if you want zero water in the sauce.
- Do not cook the noodles longer than 2 minutes; they go limp fast.
Storage: Best fresh. Zucchini noodles release water as they sit.
Food safety: the USDA’s minimum internal temperatures are 165°F (74°C) for poultry, 160°F (71°C) for ground meat, and 145°F (63°C) for whole cuts of beef, pork, lamb and fish, with a 3-minute rest for the meat. Use an instant-read thermometer. More on food safety.
