Takeout beef and broccoli is thickened with cornstarch and loaded with sugar. At home, a splash of broth, soy sauce, garlic and ginger and a pinch of xanthan gum give you the same glossy sauce.
Nutrition per serving (estimated)
Method
- Stir the soy sauce, broth, sweetener and ginger together. Sear the beef in 1 tablespoon oil over high heat in two batches, 1 to 2 minutes each. Set aside.
- Add the remaining oil and stir-fry the broccoli with a splash of water, 3 to 4 minutes until crisp-tender. Add the garlic for 30 seconds.
- Pour in the sauce and simmer 1 minute. Sprinkle in the xanthan gum while stirring until it lightly coats a spoon.
- Return the beef, toss to coat, and finish with scallions and sesame seeds.
Chef’s notes
- Freeze the beef for 20 minutes to make it easier to slice thinly.
- Add xanthan gum a pinch at a time; too much turns gummy.
